100 Followers Celebration Cake

My TikTok hit 100 followers!! It's a cause for celebration, which means it's rainbow cake time. I've made this cake before (by Janes Patisserie), but this is a sized-down version as it was only my family eating it!


I will warn you, making this cake does sign you up for an awful lot of washing up, but I promise it's worth it




 

The Rainbow


Choosing the right food colouring is the most important part of making a rainbow cake. I always suggest using gel food colouring as it's more pigmented and is less likely to affect the texture or taste. I use colour splash, but you can use any! I find colour splash holds its colour fairly well in the oven, but bear in mind some others may not, so it's important you're happy with the colour before it goes in the oven



 



Method:


  1. Preheat your oven to 160c Fan and line your 5 inch baking tins

  2. Cream together your 300g of butter and caster sugar until it is fluffy and lighter in colour

  3. Add your flour, eggs and vanilla extract and mix in. Be careful not to over-mix at this stage as you'll need to mix it again after adding food colouring

  4. Divide your mixture into 5 bowls and add a couple of drops of each of your food colourings at a time until you reach your desired colours. I did red, yellow, green, blue and purple

  5. Add your mixture to your pans and bake in the oven for 25 minutes

  6. Remove your cakes from the oven and leave them to cool in their tins for 10 minutes

  7. Remove your cakes from their tins and leave them to finish cooling on a rack

  8. To make your buttercream, beat 250g of butter until it's fluffy

  9. Add your icing sugar gradually until it's all combined

  10. Set a few spoons of your buttercream aside to do your clouds

  11. Construct your cake by adding buttercream in between each layer, then add a crumb coat to seal it

  12. Place your cake to set in the fridge

  13. Add a couple of drops of blue food colouring to your remaining buttercream until it's pastel blue

  14. Add your blue buttercream to your cake in a smooth even layer

  15. Pipe your buttercream clouds using a round piping tip, smoothing them slightly with a palette knife if needed
