Chocolate and Raspberry Loaf Cake

I know I'm on a bit of a raspberry hype at the moment, but you can't really blame me when it's this good of a combo. I've always dreaded trying to do ganache frosting but I think I've finally got it down!

The Sponge
Like all my loaf cakes, the sponge for this one follows a 1:1:1 ratio for the ingredients. As the ganache is quite rich I didn't want the sponge to be too intense, so we're using cocoa powder as opposed to melted chocolate.

Ganache
As I mentioned earlier, I've always found ganache a bit intimidating. Whenever I've made it before it hasn't been thick enough and I've ended up whipping it instead. It turns out I just wasn't chilling it for long enough after I'd made it, so learn from me and leave it in the fridge for at least an hour, stirring every 15 minutes or so.

Method:
Preheat your oven to 160c fan
Cream your butter and caster sugar together until fluffy and slightly lighter in colour.
Add your flour, cocoa powder and eggs and mix until all the ingredients are combined. I usually do this step by hand to prevent over-mixing
Add your mixture to your loaf tin and put it in the oven on the middle shelf and leave to bake for 55-60 minutes. I recommend checking from 50 minutes on in case your oven runs a little hotter than mine.
Whilst your cake is cooking, chop up your chocolate finely and place it into a bowl
Heat your cream in the microwave or in a saucepan and then pour it over your chocolate.
Stir your chocolate until it's completely melted into the cream. If you end up with lumps that won't melt, simply warm the mixture using a bain marie or in the microwave.
Place your bowl of ganache in the fridge and leave it to chill for at least an hour, stirring every 15 minutes
Remove your cake from the oven and leave it to cool in the tin for about 10 minutes then place it on a cooling rack.
Once your cake is fully cooled, take your ganache from the fridge and give it a good stir, the spread it over your cake
Top with fresh raspberries and serve!
