These brownies are my go-to recipe when I'm cooking with people new to the baking scene. It took me years to create a brownie recipe I was happy with but with lots of time and tweaking, I've finally settled on this one.
Mixing
These brownies use a combination of the wet/dry method and the sponge method. I find this gives the brownies a nice fudgy texture that's chewy with a nice shiny top! I melt my chocolate and butter together and then add the sugar whilst it's still warm allowing it to melt in slightly. I wait for it to cool a little more then add the eggs. The flour is added last.
Toppings
I encourage you to get creative with this recipe. Add whatever additions make you happy. I add chocolate chips and crushed-up Oreos to mine sometimes but you can truly add anything both into the mixture and on top!
Method:
Line your tin with greaseproof paper and preheat your oven to 170c fan,180 non fan
Sieve your flour and baking powder into a mixing bowl
Melt your chocolate and butter together in a bain marie. Add your sugar and then remove your bowl from the heat
Add your eggs and vanilla extract and mix them in
Add your warm chocolate mixture to your flour bowl and mix this in
Add in any extras you want to include such as marshmallows, chocolate chips etc
Add your mixture to your pan and cook for 20-25 minutes
The mixture will still be slightly gooey when your brownies come out of the oven, but they'll continue to cook as they cool so don't panic!
Once cooled, remove from the pan and cut up into squares
