Pumpkin Patch Cupcakes

I thought it was about time we had a spooky recipe on this blog! We’re edging closer to Halloween and I am incredibly excited to say the least. These pumpkin patch cupcakes are a fun treat for Halloween parties or for trick-or-treaters.



 

The Sponge


The sponge recipe for this one is incredibly simple. We’re mostly sticking to our 1:1:1 ratios like usual, because of this, I do recommend weighing your eggs to try and get them as close to the weight of your other ingredients as you can. Aside from that, it’s business as usual. That means, mixing by hand once your flour has been added, and creaming your butter and sugar till it’s fluffy.


 

The Decoration


The decoration aspect of these cupcakes is the main attraction. We have a chocolate buttercream and crushed Oreo bottom layer for our “soil” patch, and then orange and green buttercream for your pumpkins. I won’t lie, getting your pumpkins to stick to the crushed Oreo is a bit of a nightmare that I learnt the hard way, so I suggest you leave some gaps in your Oreo topping so your pumpkins can adhere to the chocolate buttercream underneath.



 




Method:


  1. Line your cupcake tray with 6 cases and pre heat your oven to 160c Fan

  2. Cream your butter and sugar together until it has lightened in colour and looks fluffy

  3. Add your eggs, flour and cocoa powder and mix by hand until it’s all fully incorporated

  4. Split your batter evenly between your cases and pop them in the oven to bake for 22-25 minutes

  5. Take your cupcakes out of the oven, you’ll know they’re ready when they spring back when pressed

  6. Leave your cupcakes to cool

  7. Whilst you’re waiting, split some Oreos in half and remove the centre (you can eat the icing if you want, we’re not using it!)

  8. Crush up your Oreo biscuits. You can do this with a food processor, or by popping them in a SEALED bag and whacking them with something solid

  9. Make your buttercream by whisking together your butter and icing sugar with an electric whisk

  10. Split your buttercream into three bowls, one with two teaspoons, one with 6 teaspoons and then one with the rest in

  11. Add green food colouring to your smallest bowl, orange food colouring to your medium bowl and cocoa powder to whatever left

  12. Mix these in throughly and then add your buttercream to a piping bag. You’ll need a small round tip for your green buttercream, and a star shaped tip for your orange.

  13. Spread a layer of chocolate buttercream over each cupcakes (it doesn’t have to look pretty)

  14. Add your crushed Oreo over the top of your buttercream, leaving little gaps to add your pumpkins

  15. Pipe your pumpkins using your star shaped tip

  16. Pipe your pumpkin stems and vines with your small round tip

  17. Serve and enjoy! (And Happy Halloween)
