Rainbow Cupcakes

Is there anything more fun to do than make a cake rainbow? I don’t think so, and doing rainbow buttercream is suprisingly straight forward so let’s get stuck in!




 

The Sprinkles


It can be a struggle to get sprinkles in the uk that actually hold their colour when baked. We don’t have access to the same food colourings they do in the us, which definitely holds us back! Unfortunately, supermarket sprinkles simply don’t work in the uk for bakes like this, but you can definitely still use them for decoration.


I found these sprinkles on Amazon which I tend to use, but I’d recommend just searching for any American or high quality sprinkles. As always, I’m not paid for the products I recommend, they’re simply just a helpful guide if you’re not sure what you’re searching for!


 

The Frosting


The rainbow buttercream for these cakes are what makes these cakes so fun to look at and it’s surprisingly simple to achieve. I’m planning on uploading a tutorial for two tone frosting on my TikTok soon, but I’ll run you through it here as well!


Simply spread out a piece of cling film, and make stripes of your different colour buttercreams. Roll it into a sausage shape and then cut off the end and place it in your piping bag. You should end up with a lovely rainbow gradient at the end.


 


Method:


  1. Preheat your oven to 160c Fan

  2. Line a tray with 12 cupcake cases

  3. Cream your butter and sugar together until it’s light and fluffy

  4. Add your eggs, flour and vanilla extract and mix until fully combined

  5. Add your sprinkles and mix them in by hand, I generally just add a couple of handfuls

  6. Spoon your mixture into your cupcake cases

  7. Bake in the oven for 20-25 minutes

  8. Remove from the oven and let them cool in the tin for 10 minutes, then move to a cooling rack

  9. Whilst they’re cooling make your buttercream

  10. Whip your butter until it’s light and fluffy then add your icing sugar slowly until it’s fully mixed in

  11. Split your buttercream into as many bowls as you have colours

  12. Add your food colouring to each bowl and mix in

  13. Add your buttercream in stripes to a piece of cling film, roll it into a sausage and cut off the end

  14. Place your buttercream into an icing bag with a star shaped tip

  15. Pipe your buttercream onto the top of your cakes and serve!
