Raspberry Meringues

These meringues are the perfect choice for an easy to make Valentines Day treat. With just 4 ingredients you get a gorgeous bake with very minimal work.



 

The Decoration


The decoration of these meringues is arguably what makes or breaks them. I made mine heart-shaped and added some pink food colouring to stick with the Valentine's Day theme. But, if you'd like to make them at a different time of year you can just do circles and omit the food colouring.



 

Method:


  1. Preheat your oven to 140c Fan

  2. Separate your eggs and add the whites to a bowl (if you're feeling ambitious you can use the yolks to make a raspberry curd, you can find some instructions here)

  3. Whisk your eggs on a high speed until they look white and fluffy

  4. Continue to whisk your eggs whilst gradually adding your sugar until it's fully mixed in

  5. Add a few drops of pink food colouring and keep whisking until your egg whites form stiff peaks and look white and glossy

  6. Add your meringue to a piping bag with a round tip

  7. Line two trays with baking paper

  8. Pipe your heart shapes onto your lined trays

  9. Place in the oven on the middle shelf to cook for 30 minutes

  10. Remove your meringues from the oven and leave them to cool

  11. Pour your cream into a bowl and whisk it on a high speed until it's thick enough to pipe

  12. Pipe your cream on top of your meringues and then top with your fresh raspberries
