I don’t know if it’s a British thing, but I was always obsessed with the idea of s’mores as a kid. They’re not really a thing over here, which I think made me want them even more.
I’ve decided to indulge my child self here and put together this s’mores chocolate bark. It’s shards of marshmallowy, crunchy goodness that’s perfect for gifting or eating yourself with reckless abandon!
Toppings
I kept the toppings on this one exclusively s’mores themed, but that doesn’t mean you have to. The joy of chocolate bark is that you can add whatever you want to it.
You can also use any kind of chocolate in this recipe depending on what’s your favourite, it’s totally customisable.
Method
Line a tray with foil or baking paper and set it aside
Crush your shortbread and keep it to one side
Melt both your chocolates. You can either do this in the microwave or using a Bain Marie. I recommend tempering your chocolate for this recipe but you don’t have to. If you’d like to give it a try, you can follow my guide here
Pour the milk chocolate onto your lined tray and spread it till it’s about 1-2cm thick
Add the white chocolate on top, and swirl it through the milk chocolate. I use a skewer to do this
Add your marshmallows and crushed shortbread on top. Try and distribute them evenly
Put your tray in the fridge for a couple of hours until it has hardened
Take your tray out of the fridge and break it into shards. I take mine off the tray and drop it onto the counter, but you can cut it if you want to be a bit more graceful!
Tips and Tricks
I use a silicone spatula to mix my chocolate as I find the chocolate sticks less
I recommend tempering the milk chocolate so it stays glossy with a nice snap
When melting the chocolate using a Bain Marie I use a metal bowl, as it works faster (please do not use a metal bowl in the microwave though!)
Make sure you have all your toppings ready so you can add them as soon as your chocolate is melted
