Uploading this recipe has been on my to do list for a long time. I recently made some for a friends birthday and I decided it was about time I took some photos and shared them wth you all. I use a basic chewy cookie recipe and add espresso powder, and then simply topped with tiramisu cream, but more on that later.
The Cookie
As I mentioned earlier, the cookie recipe I use for this is a pretty simple. It’s a basic chewy cookie recipe with a teaspoon of espresso powder added. Make sure you use espresso powder rather than ground or instant coffee, or the recipe won’t work.
The Cream
This was my first time making tiramisu cream and I’ve got to say, it went really well! As the cream contains double cream and mascarpone, you do need to store these cookies in the fridge.
Method:
Preheat your oven to 170c Fan
Melt your butter and then leave it to cool
Add your brown sugar and 100g of granulated sugar to the butter and mix until combined
Add your egg and 1 tsp of vanilla extract to your mixture and beat them in. The mixture should go lighter in colour at this point
Add your flour, bicarb and espresso powder and mix until they are combined
Line your trays with baking paper and add your balls of dough. It’s worth doing them quite small as they do spread a lot!
Bake the cookies for 13-15 minutes depending on your oven and then remove them from the heat
Leave the cookies to cool on their trays
Add your double cream to a bowl and whisk it until it becomes stiff
Add your vanilla and the rest of your granulated sugar (30g) and whisk these in again
Add your mascarpone to the mixture and fold it through using a spoon or spatula
Add your cream mixture to a piping bag
Pipe your cream onto your cookies in a spiral, and then top with a light dusting of cocoa powder
